This Chicken recipe is not only easy, it’s juicy and really doesn’t take a lot of dishes. Exactly 4. 2 bowls for your breading station, a cutting board for seasoning and a pair of tongs to move your chicken around. DASSIT! And if we’re being honest, 3 of these steps can be done within 2 bags. Just saying. I love this recipe because while it is super simple, it’s full of flavor and creates such a tender piece of chicken. It’s especially great when you only want one piece of chicken. You don’t have to cook in a pot of oil for one piece. Which means more delicious protein for sandwiches, salads and egg rolls! Oh yeah, egg rolls! Make sure you check that recipe out immediately. I’m keeping it short here because I don’t have pictures to trick you into reading more! Lol. Instead, just remember to follow the recipe to get a great piece of chicken in a flash!!

The only decent picture I have is of the thigh on a salad. Which was also good. I’ll get some pics soon!!

Crispy Keto Air Fryer Chicken Thighs (or breasts!)

The easiest and juiciest way to get the keto fried chicken of your dreams. Don’t bother getting out a bunch of dishes for this. 4 dishes max and only 1 if you believe in yourself! Made in just about 15 mins and devoured in 5, this will be your go to fried chicken recipe for keto friendly protein for a salad, sandwich or egg rolls!

Ingredients:

For the Chicken
  • 1 boneless chicken thigh (skin ok if desired)
  • 1/2 kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp poultry seasoning, like Bells
  • 1/4 tsp sweet paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne (if desired)
For the Dredge Station
  • 1/2 cup Pork Rind Breading
  • 1/2 cup buttermilk or heavy cream + 1 tsp vinegar
  • 1 egg
  • 1 tbsp hot sauce
  • 1/2 tbsp Keto Worcestershire sauce
  • 1 tsp kosher salt
  • 1 tsp pepper

Instructions:

  1. Pat chicken thigh dry and place on a cutting board. Use a meat tenderizer mallet and flatten the meat to one size all around. Season on both sides and under the skin if leaving on. 
  2. In a separate, shallow bowl, whisk together buttermilk, egg, salt, pepper,  hot sauce and Worcestershire sauce until you get a homogenous mixture.
  3. If you want to make in advance for more flavorful, tender and juicy chicken, combine with the chicken thigh in a plastic zip close bag  and marinate up to 24 hours. Otherwise, proceed to step 4.
  4. When ready to prepare, preheat air fryer to 400 degrees. Dredge chicken first in the buttermilk mixture, getting it fully wet, then into the pork crumbs, pressing them onto the surface of the chicken. 
  5. When fully coated in the pork crumbs, add in your airfryer and spray lightly with cooking spray or cooking oil. Cook for 15 mins, flipping halfway through, or until an instant read thermometer reads 170 degrees.
  6. Rest for 10 mins to allow the juices to reincorporate into the meat. Enjoy!
