Hey ya’ll! So I know I don’t do a lot of desserts on here and I’m trying to get better. If you follow me on instagram, you often see me making different desserts. I love baking and it’s the way I was first introduced to the kitchen. And many of you get on me all of the time for not having those recipes posted, SO, here I am! This recipe is incredibly easy. Requires just one cooking vessel and 2 measuring devices! It’s that easy. Enter: Bourbon Roasted Cherries!

The cherries roast down to become super tender and create a luscious, thick syrup!

I am not traditionally a fruit person. As I’ve cut out more refined sugars, I find myself reaching for more fruit. And a lot of that is fruit I’ve never tried or haven’t liked in the past. Cherries were one of those fruits. I tried some once and it was as if someone slapped me in the face and challenged me to a duel. I was offended! Years later, I got a free bag of cherries as a gift from a grocery order I placed. I reluctantly tried it on my IG Stories and I was pleasantly surprised. It was like eating nature’s Starbursts and I couldn’t get enough. I’ve since eaten them with various cheeses, made them into dips and spreads and even did a cherry butter for some biscuits. But it wasn’t until I did a cherry bourbon smash drink that it hit me. I needed this combo always! I used dark sweet cherries for this recipe, but you could use any kind you’d like, so long as they are ripe, ready and pitted. You can even do this with frozen cherries without having to thaw them. No, really! This recipe is that easy. When combined with the ginger and cinnamon, you bring in rich, earthy flavors and the brown sugar helps to round out the sweetness, balancing the tartness that even sweet cherries have and helping to build the syrup that you get from roasting. Finally, we can’t forget the bourbon! Make sure you pick a bourbon you actually want to drink. Once the liquor cooks off in the oven, you’re left with the flavors of the cordial that help to create this dish. I like smoky, woodsy bourbons with hints of vanilla, so I go with that for my dish. Use what you like!

There’s really not much else to say except…go make these. Like right away! Serve over ice cream, over baked treats or with dark chocolate. Another thing you can do…MAKE BBQ SAUCE!!

Bourbon Roasted Cherries

One of the easiest recipes you’ll ever make! Fresh cherries are combined with bourbon, brown sugar and a few spices and then roasted to give you a dessert that is decadent and a grown up twist on the classic cherry on top! Use these on ice cream, over baked desserts and even inside of tarts!
prep time: 5 Mcook time: 30 Mtotal time: 35 M

Ingredients:

  • 12 oz cherries (any kind), pitted
  • 3-4 tbsp bourbon
  • 3 tbsp brown sugar or Swerve brown
  • ¼ tsp ground ginger
  • ½ tsp cinnamon

Instructions:

  1. Preheat oven to 400 degrees.
  2. In a baking dish, combine all ingredients. Mix together until the sugar is dissolved.
  3. Place baking dish in oven and cook for 25-35 minutes, or until cherries are softened and a syrupy liquid is produced.
  4. Remove from oven and allow to cool slightly if using immediately. Serve over ice cream, cake or with dark chocolate.
  5. If storing, keep in an airtight container. Cherries can keep up to 2 weeks. Enjoy!
