* Quietly sneaks back in like I never left* Hey ya’ll! Lol. It’s been a while, I know. But in my defense, I just relocated to a whole new city and purchased my first home and it’s been a lot. Now that I’ve got the reigns on things, I can come back on a consistent basis! And I’ve been working in the background, filming and writing recipes so that I wouldn’t fall behind! The first one I’m starting with is this apple butter recipe that only takes about 2 hours and is SO incredibly delicious, you will love what you’re eating and be eating it on everything. Let’s get into the inspo. Oh yeah, AND THERE’S A VIDEO!!!

THE INSPIRATION

My inspiration for this recipe was really myself! I love apple butter and absolutely remember the first time I had it at a restaurant, probably Cracker Barrel, and I instantly fell in love. I’ve always had a thing for apple sauce and apple butter is like it’s grown and sexy cousin that drinks red wine and eats charcuterie. Seriously, the depth of flavor that you get in apple butter, pair with the smooth, but thickened texture is exactly what you need to bring the apple flavor to your table this fall. Because, as is the case every year, I am trying to make apple the go to flavor of fall and not pumpkin or pumpkin spice! Don’t @ me! Before we get into the recipe, let’s check out the details so you can get your hands on some apple butter ASAP!

I was able to make 3 and a half jars with this recipe, making it perfect for gifting and canning!

THE DEETS

Once I knew I was going to take the plunge to make my own apple butter, I had to figure out how I’d do it. I am not the most patient person, so taking 12+ hours to get to the final result wasn’t exactly something I wanted to do. Enter, the Instant Pot. This tool is truly a work horse that has so many functionalities, you can use it for just about anything. In this case, I used both the pressure cooking and sauté settings to end up with the perfect apple butter in only 2 hours! In terms of flavor, you can keep it super simple by using just cinnamon and sugar, or you can really take it to the next level by going with my Winter Spice mix that adds in warm spices of anise, cardamom, black pepper and more. I love this combo because it gives anything you add it to complexity and works perfectly in fall recipes. Ok, so now that we have the details, let’s get into tips so you can go straight to the recipe!

TIPS FOR MAKING

This recipe is pretty straightforward, so the tips here are going to be ver simple!

  • For a complexity of flavor, mix up your apples. I used a combination of granny smith and sweet tango. But go wild with your choices!
  • If you find that the apples you selected are too dry, add up to 1/4 cup of water to your instant pot. Do this only if your pressure cooker gives you a burn warning.
  • Remember that the apple butter will thicken as it cools. You want the apple butter to be slightly less thick than you want your final result to be.
