Oh yes! TWO recipes for Super Bowl because it is my favorite non-holiday, holiday! Hey ya’ll. Thanks for coming to check out these incredible po’ boy skewers. They are low carb, but offer just enough crisp and crunch to give you texture. They’re topped with a spicy remoulade sauce that takes you right down to NOLA. My favorite part of this is that you can customize this to your po’ boy preferences; oysters, catfish and even chicken work so well to give you a great skewer that won’t have you missing the bread!

The Inspiration

The inspiration for this dish comes from my love of New Orleans cuisine and the fact that I strive to achieve a low carb diet. Not because of a fad, but because my body is very sensitive to carbs, though I love them! So when I thought of a fun Super Bowl dish it was instantly po’ boys. Then I thought low carb which meant removing the bread. At first I thought salad, but that’s no fun and then the tiniest voice in the back of my brain said, “what about skewers?” And so to that tiny voice, I say thank you! These are portable, fun and packed with flavor from the spices on the shrimp and the marinated tomatoes. The folded butter lettuce is soft and succulent, but strong enough to slide off of the skewer and create a mini wrap! It’s so perfect and works with a lot of proteins. And the shrimp isn’t even the only star in this, let’s get into the stack!

I mean, just look at these? They’re SO BOMB! And the sauce just takes it over the top! And the spices add just enough texture to give you a bit of crispness!

The Deets

This skewer is a double stack of shrimp, butter lettuce and tomatoes. When you think of a po’ boy you automatically think of the french bread it’s served on, as well as a great, creamy remoulade sauce and the toppings. The most traditional po’ boys are simple with only lettuce and tomatoes, but some people will add pickles and onions as well. You can most definitely add those to the skewers, but you definitely don’t need to. The tomatoes are the real standout here though. They are marinated in olive oil, Italian seasoning and have cloves of crushed garlic dispersed throughout. So what you get is a deeply infused tomato that not only works on this skewer, but with other things like cucumbers, mozzarella and in salads. All of this comes together as the perfect low carb super bowl dish. Something that’s full of flavor, doesn’t require a knife and fork and is way more flavorful than a veggie tray! Tips For Making

These are super easy to make and don’t require too much guidance, but ya’ll know I always come with tips to help you make it even easier! Follow these tips to have the best skewers at your Super Bowl Party!

  • The spices here serve as flavor and coating for the shrimp. This way, you don’t have to add any breading to keep it low carb, but you still get a bit of crispiness.
  • For the remoulade, add the olive oil only until you reach your desired consistency. If you’re using it to make sandwiches, keeping it thicker as a spread works best.
  • If you’re not overly concerned with staying low carb, go all the way with fried shrimp and/or pieces of toasted french bread on the skewers!
