Easy One-Pan Shrimp, Chorizo and Potato Bake

An easy, delicious one pan recipe featuring juicy shrimp, flavorful chorizo and potatoes that bakes up in just an hour!

If there’s one thing I love, it’s a flavorful one-pan dish that only takes about an hour from start to finish. And this shrimp and chorizo bake delivers! It’s layered with flavors and textures that keep it interesting to eat and hard not to have seconds. Great for meal prep and perfect for those days you want something good and low effort, but don’t want to order out! The best part of this recipe? Tips for Making A Shrimp & Chorizo Bake


The most effort you will put into this dish is slicing the potatoes and onions. Other than that, this dish comes together super quickly. You can also add or take away anything you like because it’s super customizable. Here are my top tips for making it:

  • Use Shell-On Shrimp: Baking is a dry heat, so when baking shrimp, you want to help them maintain their juiciness. Keeping the shell on does this and gives extra flavor!
  • No Meat, No Problem: If you don’t eat pork, Cacique has a great beef chorizo. If you don’t eat meat, Trader Joe’s has a great soyrizo alternative you can use!
  • Go Low (Carb): If you want to try this with a low-carb alternative, cauliflower works fantastically. Simply reduce the full cooking time to 20-25 mins, adding the shrimp in the last 10-15 mins.

Shrimp & Chorizo Potato Bake

Ingredients
  

  • 1 1/2 tbsp avocado oil divided
  • 4 medium yukon gold potatoes sliced to 1/2"
  • 1/2 medium white onion sliced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cumin
  • 9 oz chorizo
  • 8 oz shrimp deveined
  • 2 tsp chopped garlic
  • 1/2 tsp old bay
  • 1/2 tsp chili powder

Instructions
 

  • Preheat oven to 400 degrees and place rack in center oven.
  • Line a half sheet pan with foil and add potatoes. Drizzle with a tablespoon of oil and add salt, pepper, paprika, garlic powder, onion powder, oregano and sliced onion. Mix to fully coat all of the potatoes and arrange in a single layer.
  • Break up the chorizo and top the potatoes, making sure to spread the chorizo across the dish. Bake for 30 minutes.
  • While the potatoes and chorizo bake, add remaining oil to shrimp, along with garlic, old bay and chili powder. Remove tray from oven and add shrimp to pan, along with any juices. Bake another 10-15 minutes or until shrimp are cooked.
  • Serve with a squeeze of lemon or lime juice and Enjoy!
