Hey! I want to start off this post with a huge THANK YOU to everyone who has been coming to the site! For Keto recipes, comfort recipes and everything else. I am so happy to have you all here and interested in the content I produce! I means SO very much to me. Now that the sappy stuff is out of the way, let’s get into what you’re really here for: ALFREDO SAUCE! I have to admit, I am a fiend for a good Alfredo, but good Alfredos are hard to find. As with everything else, I am particular over my Alfredo sauce. I don’t want it so thin it won’t stick to the pasta or so thick it’s like eating a cheesy peanut butter. Just ew! I also want a good cream and cheese flavor. I don’t need a lot of additions like cream cheese or making a roux for an Alfredo I can enjoy. For me, a perfect Alfredo is just thick enough that it sticks to the noodles and any additions, but thin enough that it’s still a sauce. And boy does this one deliver, and with only 5 ingredients!

I’ll confess, this recipe has been my go-to for years, long before I started focusing on my health and weight loss and way before I ever went keto. It just so happens that it is already keto friendly and can be done in under 20 mins including cooking a protein, vegetable and pasta! Talk about an easy dinner night. I also love that this recipe can be doubled, tripled or more for a larger portion, or halved for a single serving (but I like to have leftovers!). You can also choose to omit the garlic if you are super strict keto or just don’t like the flavor, but to that I’d say, “Who are you?!”. I use 3 cloves of garlic in this recipe, but you can reduce it to one to have a regular alfredo sauce with a little garlic backnote. I also recommend adding in a healthy portion of cracked black pepper. As far as salt goes, I prefer to add that last as the parmesan you choose may be a more or less salty than others, so it’s best to adjust at the end. Then just pair it with your favorite keto friendly, or regular, pasta or dish. This sauce is also great over veggies, as a base for a cauliflower crust pizza

No, but do you see that sauce. It’s so dreamy!! Whether with pasta, veggies or a protein, it’s the perfect creamy sauce for you!

From here, you can add things like cajun spice, sautéed peppers & onion, a splash of tomato sauce or even some pesto to make it the Alfredo of your dreams. Ok, let’s get into the recipe, but before we do, here are a few tips to make it as easy as possible for you:

  • Make sure the garlic is softened and lightly browned, but not deep otherwise, you can risk burning it and having a bitter taste
  • Leave the salting for the end, right before you add any additions to the sauce. That way you can gauge how much salt you actually need. Different cheeses can vary in saltiness, even the same kind of cheese by brand.
  • Add your cheese right when you see bubbles on the rim of the pot. stir to melt completely, then simmer on low heat to get to desired thickness without scorching your sauce

Alright everyone! Make this one tonight! I promise you you won’t regret it!!
