Ya’ll, I said nearly everything that had to be said about why I made these desserts in my last post. So I’m gonna keep it incredibly short in this one and go straight to tips after this little intro. I love a good chocolate cake. It’s my favorite cake that I hardly ever order because it’s hard to find a good one. I also love brownies, like most everyone else. When I thought about Valentine’s day, i wanted to bring both elements together in this dessert that’s super easy and chocolatey and gooey and just perfection! There’s additional spices that give it a little extra oomph and makes it reminiscent of a Mexican Hot Chocolate. It’s so dreamy, that’s why I did TWO desserts for Nik In The Kitchen and this one is a completely adaptable for keto/low carb so that you can indulge without falling out of your macros!

You can see the vanilla bean peaking through along with that smooth, creamy texture. It’s perfection!

Tips For Making

These are pretty straightforward, but I do have 2 tips for making these amazing brownie cakes:

  • Go with a chocolate bar over chocolate chips if you want the gooey, melty chocolate center. Chocolate chips do not melt fully, so you will likely get melty chips rather than pools of melted chocolate.
  • Do not overmix. When your ingredients are just combined, stop mixing. That will cause your cake to be crumbly and a bit tough rather than tender as you get with this cake!
