I know, I know. I don’t even want to hear it!! But I’m back. And boy, do I have a lot of upcoming recipes for you all!! I’ve started a new full time job and have been in the thick of learning my new role and as soon as I do, it changes!! I’ve also adapted the keto lifestyle and boy, I’ve been really enjoying the benefits!! I have so many good tips to share, but I’ll start with this 1 year progress picture!! I mean, look at me! I’m so proud of myself because I tend to fall off of things, but after my life fell apart last year, I got on my grind and everything is great now. I feel like all I went through had to happen so better things could fall together.

Anyway, enough of that sappiness! I am happy to share my first official “keto” recipe on the blog! I have been posting on Instagram, but I don’t want to neglect the people who need a searchable database of recipes. Hence: Asparagus!! In my home, asparagus is a curse word to everyone but me. My sister and her fiance like it and my brother, I’m sure would try it. But me and my parents…they aren’t having it. Lol. This recipe though, with it’s citrus pops and deeply caramelized garlic flavor create a combo that no one can deny…except maybe Dracula. Because it IS garlicky.

What I love most about this is for all the flavor it has, it has over 7g fat and less than 7g of carbs per serving, making it a perfect Keto friendly side that is sure to please any eater. You can make variations of this with different spice combos, like shallots, bacon and tomatoes or sweet onions and spicy smoked paprika. It also pair so well with many proteins. As you can see, I had it with glazed salmon and this morning for breakfast with egg whites and a Hollandaise sauce. Honestly, with this base recipe, you can do anything, like Bey and Jay! This recipe is so simple, I don’t even have much to say except, get this recipe and make it!!!

Perfectly Roasted Keto Asparagus

Ingredients:

  • 1.5 lbs asparagus spears
  • 1 tbsp neutral, high heat oil
  • 2-4 cloves garlic
  • zest of 1 lemon
  • 1/4 tsp chili flakes
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions:

  1. Heat oven to 425 degrees and place rack in upper third of oven. Pat asparagus completely dry.
  2. Remove tough ends of asparagus by grabbing spear at the end and bend gently until asparagus naturally breaks. This will give you tender spears.
  3. Line up spears by the tips and use a sharp knife to cut the ends of the other spears where the first spear broke. If there are any rough ends left, do those individually by following step 2.
  4. Place asparagus on an aluminum baking sheet. You can line with parchment for easier clean up.
  5. Drizzle oil over spears and massage into vegetable, making sure to get the tips.
  6. Place all remaining ingredients on asparagus and rub in to coat evenly. Arrange spears in a single layer to ensure you are roasting and not steaming the vegetable.
  7. Bake for 13-15 minutes, or until asparagus is tender, with a slight firmness in the center and garlic is beginning to brown.
  8. Sprinkle with additional salt, lemon and/or chili flakes and serve. Enjoy!
