- 4 cups cubed banana bread day old bread left out uncovered, or refrigerated a few days.
- 1 cup half and half
- 2 eggs
- 1/4 cup brown sugar
- 1 1/2 tsp pumpkin spice blend
- 1 tsp vanilla extract
- 1/2 tsp kosher salt
Add cubed banana bread to a 9x13 baking dish that has been sprayed with non-stick spray or buttered
In a measuring cup, mix together remaining ingredients until eggs are fully combined and sugar is dissolved.
Pour custard mixture over bread and stir to make sure all pieces are coated. Press down gently to ensure all bread pieces are touching the custard.
Cover with foil and allow to absorb the custard for at least 30 minutes, up to overnight
Bake on middle rack at 375 for 30 minutes with covered and 10-15 minutes uncovered, or until casserole is set in the middle.
Allow to cool for 10 minutes. Serve and enjoy!
