Easy Make Ahead Banana Bread French Toast Casserole

Ingredients
  

  • 4 cups cubed banana bread day old bread left out uncovered, or refrigerated a few days.
  • 1 cup half and half
  • 2 eggs
  • 1/4 cup brown sugar
  • 1 1/2 tsp pumpkin spice blend
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt

Instructions
 

  • Add cubed banana bread to a 9x13 baking dish that has been sprayed with non-stick spray or buttered
  • In a measuring cup, mix together remaining ingredients until eggs are fully combined and sugar is dissolved.
  • Pour custard mixture over bread and stir to make sure all pieces are coated. Press down gently to ensure all bread pieces are touching the custard.
  • Cover with foil and allow to absorb the custard for at least 30 minutes, up to overnight
  • Bake on middle rack at 375 for 30 minutes with covered and 10-15 minutes uncovered, or until casserole is set in the middle.
  • Allow to cool for 10 minutes. Serve and enjoy!
