I’m gonna keep this short and sweet because I wasn’t even planning on releasing this recipe. But after I made it and tasted it, it was too good not to. I even went on and made a video because I believe in it so much. Creamy garlicky grits from Southern Culture Artisan Foods, a Black Woman owned business, are smothered in this delicious sauce that came about because I didn’t have any white wine. Thank God for mistakes!! I even included a few troubleshooting and tips and tricks for navigating the dish in case this is your first time working with grits! Also, there’s a keto/low carb variation so you can make these and keep it within your macros as well. See, I’m always looking out!! Alright, let’s skip the Inspo and Deets and get right into that section, because I’m too excited for ya’ll to make this!!
Tips For Making
I’m no stranger to making grits, but I know a lot of people don’t work with grits often, and when the do, they tend to be quick cook which is what you DON’T want for these. So that’s tip number 1!!
- Be sure to read the package to see cooking time. Most grits take about 30 minutes, but that can vary depending on how much you actually make. For this recipe, I find right around 20-22 mins worked best.
- The sugar in this recipe is to caramelize the shrimp when they sear. This adds a nice texture and allows you to cook them for less time to get a beautiful golden brown color.
- Tasting for salt is important in this recipe because depending on the chicken stock and cheese you use, the salt can creep up very quickly.
- To make keto friendly, sauce 12oz cauliflower rice in oil for 7 mins. Then add 1/4 cup heavy cream and 2-4 tbsp parmesan. Stir until heavy cream is almost fully absorbed and season with salt, pepper and herbs.
