Hey ya’ll. It’s that time of year. The stores have all turned red and pink inside. There’s balloons, teddy bears and flowers everywhere. Love is in the air, so be sure to hold your breath! Ok no, I’m not that much of a curmudgeon when it comes to Valentine’s Day. I actually get super into it in a non-romantic way. I love love and I love to celebrate and make others feels special all year around, but it’s especially special on Valentine’s Day! That’s why I did TWO desserts for Nik In The Kitchen and this one is a low-carb take on a classic!
The Inspiration
My inspiration for this dish is very simple: many people consider creme brûlée to be an upscale dish, but it’s really very simple to make. And since most people are (see also: should) be doing Valentine’s Day at home, I thought this would be a great way to bring the restaurant experience to your own table. For me personally, I’ve never had a good Valentine’s Day, unless I’ve spent it cooking for myself, so I wanted to take this creme brûlée version a step further by making it low carb and keto friendly. I know there’s plenty of people looking for low carb desserts and keto friendly desserts, so I got ya’ll. I’ll go into some deets before jumping into the recipe!
The Deets
Creme brûlée is a pretty straightforward dish. A very basic creme brûlée has just 4 ingredients: cream, sugar, egg yolks and flavoring. With 3 of those ingredients being naturally low carb, a simple swap of 0 carb sweetener for sugar and the addition of brandy upped this to a delicious keto friendly dessert that is too good to resist. I also simplified this recipe by not having to thicken the mixture on the stove. Once the cream is ladled into the whipped egg yolks, you can add directly to the ramekins and bake in a water bath. That takes a lot of the pressure of scorching the bottom of the creme brûlée. Once baked, chill for at least 2 hours, and up to 3 days. When I say make ahead, I really mean it!
Tips For Making
I only have 1 tip for making these low carb creme brûlées because they are THAT easy! And it’s this:
- Place the filled ramekins in your baking dish and transfer to the oven. THEN pour in the hot water, being sure not get any in the ramekins. That will reduce the likelihood that you will burn yourself with boiling water walking or moving a filled pot!
