Ok, so I am back! As everyone is aware, we’ve been on lockdown for a while, so I wanted to make sure I was creating, but I had to take a mental break for a while. In the meantime, I’ve been working out and just got back on keto again! Yes, I am back to my low carb life and it is hard, BUT not as hard as the first time I started keto. I think it’s because even during my nine months off of Keto, I still focused on limited my carbs consumption. But during that time, I gave up meat, completely, and was low dairy also, so I found it really difficult to both adjust to my new lifestyle AND go hit my macros. I am back to eating meat and dairy in moderation, but I have a big focus on making keto vegan and vegetarian dishes as well. Enter, the waffle!
So how did this waffle come about? I personally do not like figuring out substitutions of flour for recipes I love. I’m lazy like that. And one of my favorite quotes is from Steve Jobs who said to give a job to the laziest person and they’ll figure out the easiest way to do it. THAT IS ME! So I went through the mental rolodex of recipes I have and thought of my flourless PB Cookies as well as flourless pancakes! They are super successful, mimic flour filled versions and are so easy! I thought if you can make cookies without any flour, SURELY, you could do waffles that way. And boy was I right! These waffles are super fluffy, easily doubled, tripled (or more if you’re feeling frisky). These waffles are perfect as a breakfast item, but are also really great for chicken and waffles or as sandwich slices! You can honestly do anything you want!!
These waffles are super tender with just the right amount of crispiness. Of course, you can cook these as long as you want for your desired texture, but my preference is right in the middle. I find that the waffles remain moist enough in the center, without burning the tops. Before I post the recipe, I want to drop a few helpful hints that will help you should you run into any hangups along the way :
- Cashew butter is very neutral in my opinion, with natural sweetness. You do not have to use as much sweetener with this blend, especially if you’re using them for a savory application!
- If you use Almond butter, I suggest adding about 1-2 tsp of milk or cream to add moisture. Almond butter is pretty dry and it results in a drier waffle.
- If you don’t have sugar free syrup, you can use my Keto Simple Syrup recipe and add in vanilla, maple, almond or any other extract you desire to top your waffle!
- This recipe can accommodate about a 1/4 cup of add ins such as blueberries or nuts in the waffle if you desire!

Easy, Fluffy KETO Waffles
Ingredients:
- 2 Tbsp Nut Butter, unsweetened
- 1 Egg
- 1 tsp granular sugar substitute
- 1/4 tsp baking powder
- 1/2 tsp flavoring
Instructions:
How to cook Easy, Fluffy KETO Waffles
- Preheat waffle iron so that it is nice and hot to prevent sticking or undercooking.
- Mix all ingredients in a bowl until you get a smooth and creamy mixture. If needed, add milk or cream, 1 tsp at a time to reach desired consistency. If using add ins, fold into the mixture at this point!
- Spray waffle iron and add mixture, being sure not to overfill the waffle iron to prevent overflow.
- Cook to desired doneness and remove. Top with butter, syrup or any other toppings.
- Enjoy!!
