B.A.E. Fried “Rice”

This savory breakfast dish is really one of my favorites! Smoky bacon, creamy eggs and peppery arugula come together to give you an asian inspired dish that can act as a main or a side. Bonus, it’s super fast to make and can easily be doubled, tripled or more for a brunch potluck! Only xxx calories and full of protein for a great, healthy breakfast!

You know, I wouldn’t really describe myself as a breakfast person. As a matter of fact, I usually only eat breakfast because I know I should. When it comes to my weightloss journey, they emphasize starting with a strong, healthy breakfast. And generally trying to eat most of your carbs at this time. So that’s what I do. Even still, I’m not a dessert for breakfast type of person, so I have to be in a mood to eat things like pancakes and french toast. To be honest, my favorite kind of breakfast is a savory one, like steak and eggs or leftovers from the night before. I’m perfectly ok just having a little meat and veggies, the same as I have for dinner. Which is exactly why this bacon, arugula and egg (get it, BAE!) fried rice is perfect for people like me! It’s savory enough for those who don’t prefer sweet breakfasts, but still gives you breakfast vibes with the addition of egg and bacon, classic breakfast staples. I also love that this recipe can be scaled for more or less to accommodate potluck brunches or just a breakfast for one (nothing wrong with that!). It also doubles as a late night “I’ve been drinking and I’m starving” meal that’s perfect because it comes together so quickly. Don’t ask me how I know!

This dish gets the majority of it’s flavor from the sauce that’s a blend of sesame oil, chili garlic paste and tamari sauce. For those that don’t know, tamari is a gluten free soy sauce that I love to keep on hand. You can substitute this in for soy sauce to get those salty, fermented soy flavors you love in soy sauce, without the presence of wheat making it a gluten free substitute! This is important to me, but if it’s not for you, you can very well use soy sauce. You can also use coconut aminos if you stay completely away from soy. The wilted arugula adds a slight pepperiness that gives you burst of flavor each time you have a bite. Finish that off with a creamy scrambled egg and smoky, crispy bacon and we have ourselves a ball game here!! Seriously, I shouldn’t make sports references because all I really know is that there are in fact ball games. Everything else, I make up my own rules in my mind that may or may not favor the most attractive players getting the most points.

As far as the name, I thought it was cute and considering Valentine’s Day is next Wednesday, this would be a nice dish to serve over the weekend for a pre V-day brunch at home for your boo thang. I mean, I wound’t know about that since I’ve never actually had a good Valentine’s Day ever. Like…never. And this is my first Valentine’s Day as a “single” woman in 9 years. That should give you a good idea of why I’m actually happy to decide if I want to accept the date offers for next week or not. Whew…we got a little deep there. MOVING ON!

Anyhow, I like to finish this dish off with a little sriracha for some additional spiciness and some black and white sesame seeds for both texture and presentation. To take it up a notch, you can toast the sesame seeds to bring out their nuttiness and add another dimension of flavor to the dish. To keep the Asian inspired feel going throughout the dish, serve with some Sake Screwdrivers and keep going until you’ve had enough to pretend you’re a whole other person for that after breakfast role playing you’ll be doing later. I mean, if you’re into that sort of thing! Lol.  


Top with a little extra drizzle of coconut nectar and some chili flakes to really amp up the sweet and spicy combo!

Nutrition: 423 calories, 17g protein, 13g fat, 45g net carbs

Ingredients
  • 2 tablespoons Tamari Sauce
  • 1 tablespoon Sesame Oil
  • 2 teaspoons Chili Garlic Paste
  • 1/2 cup Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Quinoa, cooked
  • 1 cup Arugula
  • 2 Strips Bacon, cooked and chopped
  • 2 Eggs, beaten
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Chili Flakes
  • As Desired Sriracha, Sesame Seeds (optional)
Instructions

1. In a small bowl, bring together tamari, sesame oil and chili garlic paste and stir to combine. Set Aside.
2. Heat a medium skillet over medium-high heat. Add olive oil to coat. Add onions and cook until translucent. About 4 minutes.3. Add garlic to pan and cook until just fragrant. Be careful not to burn or it will cause dish to taste bitter. About 2 minutes.4. Add quinoa to pan and toss to heat through. About 3 minutes. Add sauce you made from earlier and toss to coat all of the quinoa evenly.5. Add in the arugula and cook until just wilted. You don’t want it cooked too far as you have more cooking to do. Just about 1 minute.6. Make a hole and add bacon pieces to the edges. In the middle of the hole, add eggs, salt, pepper and chili flakes. Using spatula, stir the eggs just in the middle to cook to a soft scramble. 2 minutes.7. Begin to incorporate the egg into the rest of the dish by gently folding in. You want to make sure you have egg and bacon all throughout the dish. 8. Serve on a plate or in a bowl and top with sriracha for extra spiciness and sesame seeds if desired. Enjoy!
