Easy 30 Minute Cherry-Lime Hand Pies
A super simple hand pie recipe that makes cherry pie portable! It comes together with under 10 ingredients and less than 30 minutes!
Hey ya’ll! So I am back this week with another recipe! This time it’s a perfect on-the-go sweet snack! These cherry lime hand pies are super easy to make, packed full of flavor and will only take you about 30 minutes to make! The shortcut? Pre-made dough. But don’t worry, I have plenty of tips and tricks to make this store-bought dough taste homemade! I guess I have a thing for mini pies!
Inspiration
My inspiration for these pies was borne out of circumstance. I saw these beautiful rainier cherries for sale and had to have them. The pinkish red swirls of color that mixed with the yellowy orange just screamed summer and the flavor did not disappoint. These have the flavor of traditional cherry, mixed with a bright, peach like citrus flavor that make them super addictive. Unfortunately for me, I also realized i had a slight allergy to the raw fruit! I knew then I had to find a way to use them, so cooking them was the next best choice!
I’ve always loved Cherry Limeade flavor. Whether it was a cocktail, a candy or a drink from Sonic, it’s usually my go-to. With these pies, I wanted to bring that flavor with a little complexity added with fresh ginger and raw sugar. Caramel notes and a little touch of spice really round out these pies and make them super craveable and almost as addictive as just eating the cherries fresh!
Tips For Making
I mentioned before that I have been really amping up the video content creation on my side and this recipe is no different. There is a step by step video that shows you exactly how the crust and filling should look, as well as how to egg wash the pies for the most beautifully browned pie crusts! I made these as an easy dessert you can make for bbqs, parties and just to have around. Once they are put together, you can refrigerate or freeze them for baking on the go ease!
- Always work with chilled dough. With pre-made dough, you have to allow it to get a little warmer than the fridge, but if your dough is too warm, it will be difficult to roll and will not rise as well.
- Use this same recipe with any fruit you want for a quick and easy hand pie recipe you can make at any time.
- To make in advance, prepare the dough up until crimping the edges. Then, freeze individually and add to a ziplock bag once completely frozen. To bake, egg wash and cook according to directions below, adding in 1-2 minutes additional for frozen pies.

Easy 30 Minute Cherry Lime Hand Pies

Ingredients
For The pie
- 12 oz Cherries
- 1/2 lime, juice divided
- 1/2 lime, zest
- 2 tbsp sugar
- 1 tbsp cornstarch scant
- 1 inch ginger grated
- 2 premade refrigerated pie crust rounds
- 1 egg
- 1 tbsp water
- additional sugar for topping optional
For the Frosting
- 1/4 cup powdered sugar
- 1/2 lime, juice
- 1/2 lime, zest
- pinch salt
Instructions
- Preheat oven to 425 and place rack in center of the oven
- Pit cherries and add to a pot along with 1/2 lime juice, sugar, cornstarch and ginger. Cook until mixture starts to boil, about 6 mins, smash cherries with a fork reduce heat and cook another 2 minutes.
- Allow to cool and add 1/2 of the lime zest to the cherries. Stir to combine and proceed to next step.
- Roll out your pie doughs. For a more homemade look, laminate the dough 3-4 times.
- Add cherry filling to pie dough for desired shape. Add top dough and pinch sides to keep filling in. Use a fork for a decorative edge. Cut a small slit to allow venting. Add pies to a parchment lined sheet tray.
- Combine the egg and water and whisk. Use the egg wash over the pies and sprinkle with sugar. Bake for 20-22 mins or until doughs are fully baked.
- Allow to cook slightly and make glaze by combing remaining zest and lime juice, powdered sugar and a pinch of salt to desired thickness. Drizzle over pies and allow to set for 5 mins. Enjoy!
